One thing I hear often is people telling me they don’t have time for breakfast. I understand that sometimes mornings can be crazy so thats why I came up with this no-excuse breakfast or snack. This is a quick and easy way to get a balanced breakfast which includes protein, low glycemic carbohydrate full of fiber, healthy fat and lots of flavor! The coconut oil in this recipe will help boost your metabolism which is a great way to start your day. Notice the balance of protein, carbohydrates and healthy fat which will keep your blood glucose levels stable and avoid that mid morning crash. Best of all it only takes minutes to make and you can eat it right away or wrap it up in tinfoil to take with you for later. I have to say that this recipe now saves me a lot of time in food preparation since I get my egg and oatmeal in one place. This is a perfect breakfast or snack for your Lifestyle Diet Plan.
Quick Breakfast Muffin
1 egg lightly whisked
1/8 cup GF oatmeal, uncooked or 1/4 cup quinoa cooked
1 tsp. baking powder
1 tsp. organic coconut oil
1 dash of stevia
1 tsp. unsweetened cocoa, carob and/or organic Powdered Peanut Butter
Mix everything together in a mug or bowl (I use a white ramekin). Microwave for 50 seconds if using dry ingredients and 1 minute or more for wet ingredients. Do not over cook as it will actually taste burnt. Its better to experiment and figure out your own microwave time as they all vary.
Simply remove and enjoy! The picture shows it topped with a few organic raspberries.
