Almond Butter Protein Cookies – gluten free, dairy free, sugar free, guilt free

It’s March and everywhere you look people are eating Girl Scout Cookies. EEEK! I realize it’s tradition and for a good cause but if you are trying to follow a clean eating plan or struggling with a health issue you don’t want to go this far off course. So be prepared for those cookie cravings with these delicious cookies that will satisfy your sweet tooth without wrecking havoc on your health and waistline.

Girl Scout Cookies in recent years have changed their ingredients to get rid of high fructose corn syrup, hydrogenated oils and artificial flavors but they are still full of sugar and GMO by products.  So if you its just a cookie you want and you can do without this tradition, these little gems should hit the spot.

Almond Butter Protein Cookies

These cookies are gluten free and use just a few ingredients making them super simple to prepare and bake.  The almond butter makes them super tasty and the oatmeal gives them a firm enough texture to hold together well.  No sugar in these cookies – just a few dashes of organic stevia to make them sweet enough without all the added carbs and sugar.  Use parchment paper and you don’t even have much clean up.  I used carob since it has some healthy benefits, is caffeine free and a good alternative for people who suffer from migraines but feel free to use the Choc Zero’s Chocolate Chips which use monk fruit as a sweetener if you must have that chocolate fix.  I promise you that carob is delicious though and worth a try.

These cookies are not detox friendly for my Two-Week Detox Plan but they are definitely a great addition to any Lifestyle Diet Plan and can be worked in as a dessert or snack.  These travel well also so pop them into a baggie and take them with you to avoid snacking on those Girl Scout Cookies!

Almond Butter Protein Cookies

Preheat oven to 350.  Line a cookie sheet with parchment paper.

1/2 cup Gluten Free Red Bob Oats
2 T almond butter
1 scoops Sun Warrior Vegan Protein
2 egg whites or 1/3 cup liquid egg whites
1 tsp. NOW organic stevia
1 tsp. baking powder
1/8 cup carob chips (optional)

Mix all ingredients together. They are sticky!  Take small walnut size spoonfuls to make 12 cookies.  Bake 10 minutes.

Per cookie:  without chips/with chips

Calories:  34/41
Fat:   1 g/2 g
Carbs:  3 g/4 g
Fiber: 1 g/1 g
Protein:  3 g/3 g

Grabbing 4 of these cookies would be about 150 calories, 12 net carbs and 12 grams of protein.  Not bad for a snack or dessert and perfect for your clean eating lifestyle.
