Gut Healthy Gelatin Jigglers

Growing up jello was a favorite snack – easy for mom to make and always on hand in case someone got sick and needed this soothing, sugary snack to make them feel better.  At some point in your life you must have had a variation of jello called a jiggler.  Jigglers are made when you use more gelatin and less liquid to get a firmer consistency that can be eaten with your hands.  If you never had a jiggler then you are in for a treat but first lets take a look at what you are really eating.

Gelatin is collagen in a smaller form.  Collagen is a protein found in the skin, bones and connective tissue of animals.  When we lack collagen in our own bodies we see problems like osteoporosis, wrinkles, gut issues and a host of other problems including inflammation.  While our ancestors tended to eat all the parts of the animal, today we usually throw these parts away or cook them.  When cooked enough the protein breaks down into a gelatinous consistency that we call gelatin.  So gelatin and collagen have very similar benefits and properties.

Getting more collagen and gelatin into our diets can be the one of the most beneficial steps we can take in healing our guts and keeping our intestinal tracts healthy.  In addition, we will see benefits to our skin, nails and hair.  The GAPS diet, used to treat autism and other gut disorders, uses gelatin and collagen in their program extensively.  Paleo fans will love this recipe as they are big believers in eating like our ancestors did for optimal health.

I choose to use a grass fed gelatin to ensure that there were no hormones or chemicals in the product.  There are several available however this brand came highly recommended and works well in the recipes.  I used a flavorful herbal tea sweetened with stevia to get a snack that is high in protein and low in carbs.  Other options might be a natural fruit juice or Kombucha.  Play with different ideas and have this snack on hand weekly as a healthy way to improve to nourish your gut health.  If you are doing BodyDesigns Two-Week Detox Plan this is a detox friendly recipe.

Gut Healthy Gelatin Jigglers

3 T Grass Fed Gelatin
4 cups brewed herbal tea or other substitute such as Kombucha about 1/2 tsp.
stevia or honey to taste

1. Make tea using only 2 cups water hot water for 4 cups tea (so it will not be diluted yet) and set aside to steep.
2. In a large mixing bowl place 1 cup cold water and sprinkle the gelatin on top.  Set aside.
3. Remove tea bag(s) from tea and add stevia or honey to taste.
4. Take 1 cup hot water and pour it over the gelatin mixture, stirring it until dissolved.
5. Pour tea into the mixture and stir together.
6. Remove mixture into a 9 X 13 glass pan and refrigerate for at least 2 hours before serving.
