Grain Free Quick Cake
Following a clean eating plan all the time can be tough. Sometimes I just want something “good” to eat but indulging in cakes, cookies or other sweets leaves me feeling lousy. The toll that sugar (grains turn to sugar in the body) takes on your health is not worth it when you really think about the consequences – inflammation, obesity, and unhealthy gut flora to mention a few.
To help people get off the grains and simple sugars and stick to their clean diets I’ve come up with several grainless recipes. If you haven’t already, check out my Grainless Pumpkin Muffins, Grain-free Waffles and Grain-free Blueberry Pancakes. My latest recipe for a Grain-free Cake follows. This is so simple and you can make it in a variety of flavors, add some berries and top it with a little coconut yogurt (to keep it dairy free also). This cake is so good for you that I even included it on my Two Week Detox Plan.
So the next time your sweet tooth is calling be prepared so you can quickly whip up a Grainless cake and stick to your clean eating plan.
Grain-free Quick Cake
1 T almond flour
2 tsp coconut flour
1/4 cup egg whites
1 tsp baking powder
1 T applesauce or pumpkin puree
1 tsp cocoa, carob or powdered peanut butter
1 dash of stevia
Optional: 1/8 cup berries
Optional: 1/8 cup coconut yogurt (sugar free)
In a round microwave safe ramekin mix all the ingredients until blended well. Microwave on high for 90 seconds. If you are adding berries you can stop the microwave halfway through and add the berries. Top with coconut yogurt or enjoy it plain.
