Lemon Chicken in the Crock Pot
Looking for an easy, clean meal that will feed your family twice? How about spending less time in the kitchen and more time on things you really want to do? Well, break out the Crock Pot because this chicken is so delicious and so versatile it is sure to become one of your “clean meal” staples!
This chicken tastes great just as it is but it’s also versatile to use in many dishes. Eat it plain on your salads or in a low carb wrap for lunches or dress it up Asian or Thai style and serve over some quinoa, brown rice or riced cauliflower. Later in the week put some in your favorite pasta sauce and serve over spaghetti squash, “zoodles” or grain free pasta. Crock Pot dishes are so easy and help take the “what’s for dinner” burden off of mom. With a little planning, you can have the ingredients for a few of these easy dishes in your refrigerator each week, ready to throw in and leave it to cook while do other things. Two Meal Crock Pot Lemon Chicken
3 lbs organic, skinless chicken breasts
1 organic lemon, sliced
1 large Vidalia onion, cut into thick chunks
2 packets of natural leaf stevia
1-2 tsp lemon-pepper seasoning
1-2 tsp herbal seasoning of choice
2-4 cups of unsalted organic chicken stock
1. Place chicken in the bottom of Crock Pot. Cover with lemons and onions. Sprinkle with stevia and seasonings. You can add garlic or whatever other seasonings you choose. Cover the chicken about half way with the chicken stock.
2. Cook for 6 hours on low or 3-4 hours on high. Shred chicken with a fork.
Serve it hot or cold and be creative with the leftovers as this makes a lot of chicken.
