Slow Cooker Chicken Tortilla Soup

Here’s an easy way to have dinner ready before you even go to work!  You can use frozen or defrosted chicken.  Just throw it all together, turn on the crockpot and dinner is cooking while you go about your day.  This spicy soup is perfect for a light dinner or make it on Sunday and enjoy it for lunch during the week.  Enjoy!

Slow Cooker Chicken Tortilla Soup

1 1/2 lbs. uncooked chicken breast (I have used frozen)
1 box POMI chopped tomato
1 small can of organic corn
1 can garbonza beans, rinsed and drained
10 oz. salsa
1 medium onion, chopped
4 oz. can of chopped chilis
2 cloves of garlic, minced
2 cups water
2 cups unsalted chicken stock
3-4 T chili powder
1/4 tsp. black pepper
1 bay leaf
4 T fresh chopped cilantro (add more if you desire)

Place chicken on the bottom of  slow cooker.  Place all ingredients on top and stir gently to combine.  Cook for 6-8 hours on low. If using frozen chicken cook for 3-4 hours on high.
Before serving remove chicken and use 2 forks to shred.  Return chicken to pot and serve.
Serving suggestions: try topping with avocado
