Slow Cooker Chicken Fajitas

There’s nothing better then coming home to the aroma of home cooking! Serving up a hot, home cooked meal is becoming a thing of the past with our busy schedules. With Crock Pot cooking, its easy to serve your family healthy, hot meals prepared with real foods (not processed foods full of chemicals!) even when you’re on the go yourself all day.

I always recommend that my clients try to cook a few Crock Pot meals a week to stay on top of family dinners and avoid the last minute runaround trying to figure out dinner after a long day at work. A good idea is to prepare the ingredients for two different Crock Pot meals on the weekend when you have a little extra time. Try cooking one meal on Sunday which can be for Monday’s dinner and have one prepared to throw in on Wednesday which will get you over the hard part of a long week.

This recipe is traditional Chicken Fajitas and can be served in low carb tortillas, large lettuce leafs, on top of a salad or simply by itself. The recipe is clean and easy and each person in the family can add their own toppings to make it suitable to their own likes. Try adding a little healthy monounsaturated fat from an avocado and some spicy salsa to keep your metabolism burning fat!

Slow Cooker Chicken Fajitas

1 1/2 pounds of organic chicken breasts
2 red peppers, seeded and sliced into strips
1 green pepper, seeded and sliced into strips
1 sweet onion, sliced into strips
1 cup unsalted organic chicken stock
1 T chili powder
1 tsp paprika
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp cumin
pinch of red pepper flakes as desired

Place peppers and onions on the bottom of the slow cooker and place chicken on top.

Mix seasonings into 1 cup of chicken broth and pour over the top of the chicken.

Cook on low for 6-8 hours or on high for 3-4 hours. Chicken should fall apart easily when done.

Shred chicken with two forks. Serve immediately or cool and refrigerate for later in the week.
