Valentine’s Day is right around the corner and with it comes thoughts of romantic dinners, chocolates and wine!  Here’s a recipe that will keep you on track with your plan but provide you and your valentine a special treat!  This black bean fudge is loaded with healthy fat from coconut oil while the black beans provide a healthy source of carbs and fiber.

This recipe makes 20 servings.  To stay on track with your diet be sure to share it with your friends and family or freeze it so you don’t eat it all in one day.

1-15 oz can of black beans, drained and rinsed well

3/4 cup carob or cocoa powder (I use carob since I can’t have cocoa and it comes out great)!

6 T melted coconut oil

4 T Lite maple syrup

1 tsp vanilla extract

1/2 tsp sea salt

Place all ingredients into a food processor or blender.  Mix until smooth.

Use plastic wrap to line a 8 inch square pan.  Place mixture into the pan using a spatula to get it even.  Refrigerate until firm.

Cut into 20 pieces.  Each piece has 108 calories; 4.3 grams of fat; 8 grams of carbs; 3 grams sugar; 6 grams of fiber; 1 gram of protein

    Way too much salt! Made this today and I’m not sure its going to turn out. The salt overpowers the chocolate and sweet flavor. It taste like bakers chocolate.

      It’s only 1/2 tsp. salt. Did you use a Tablespoon by ,is take?
