Roasted Summer Squash with Garlic and Parmesan

One of my favorite things about summer is the abundance of fresh, local produce. Farmers’ markets and grocery stores are filled with colorful fruits and vegetables that are not only delicious, but also packed with nutrition. Two of my summer favorites are zucchini and yellow squash.  These versatile vegetables are inexpensive, easy to prepare, and can be grilled, roasted, sautéed, spiralized, or even added to soups and casseroles. Their mild flavor pairs well with almost any protein, making them a simple way to add more vegetables to your meals.

Why Eat More Summer Squash?

If you’re trying to lose weight or simply eat healthier, summer squash deserves a regular spot on your plate.  Summer squash is extremely low in calories.  Both zucchini and yellow squash contain only about 20–30 calories per cup, making them a filling addition to meals without adding many calories.  In addition, they are a great source of fiber.  The fiber in squash helps support healthy digestion, promotes fullness, and can help reduce overeating between meals.  Rich in vitamins and antioxidants, summer squash is an excellent source of vitamin C, A, B6, potassium and manganese.  These nutrients support your immune system, skin, vision and overall health.  The high water contents of squash, 90%, makes it naturally hydrating and can be a refreshing addition to summer meals.  Both the low calories and high fiber lead to better blood sugar control.

One of the easiest ways to enjoy these seasonal vegetables is by roasting them. Roasting brings out their natural sweetness while giving the edges a delicious golden-brown caramelization. Add fresh garlic and a sprinkle of Parmesan cheese, and you have a simple side dish that pairs perfectly with grilled chicken, steak, fish, turkey burgers, or even tossed into a salad or grain bowl.

Roasted Summer Squash with Garlic and Parmesan

Ingredients:

2 medium zucchini, sliced into half-moons
2 medium yellow squash, sliced into half-moons
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
½ teaspoon sea salt
¼ teaspoon black pepper
½ teaspoon Italian seasoning or dried oregano
⅓ cup freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional)
Fresh lemon wedges for serving (optional)

Directions

Preheat oven to 425°F.
Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the zucchini and yellow squash with olive oil, garlic, sea salt, pepper, and Italian seasoning until evenly coated.
Spread the vegetables into a single layer on the baking sheet. Avoid overcrowding the pan so the squash roasts instead of steams.
Roast for 20–25 minutes, stirring halfway through, until tender and lightly browned.
Sprinkle the Parmesan cheese over the squash and return to the oven for 2–3 minutes, just until the cheese melts.
Garnish with fresh parsley and serve immediately with a squeeze of fresh lemon, if desired.

Nutrition will vary slightly depending on how much Parmesan adheres to the vegetables and the amount of olive oil absorbed.

Mary’s Tips

Don’t overcrowd the pan—use two baking sheets if necessary.
Freshly grated Parmesan melts and browns much better than pre-shredded cheese.
For extra flavor, add a pinch of red pepper flakes before roasting.
Try mixing in sliced onions, mushrooms, or cherry tomatoes for even more color and nutrition.
Leftovers are delicious tossed into scrambled eggs, mixed with grilled chicken, or added to pasta the next day.
