Grain Free Stuffing
Stuffing on Thanksgiving day is a tradition that most people don’t want to give up regardless of their intentions to eat healthy. Fortunately, we have a great substitute for people that are gluten or grain free this Thanksgiving. Using cauliflower as the base, this stuffing comes out tasting like the real thing.Known as the “other white food”, cauliflower breaks all the rules for being white. Unlike rice, bread and other white grains, cauliflower packs in a bunch of nutrition with very few calories. This cruciferous vegetable is rich is vitamin C, folate, pantothenic acid, and vitamin B6. Its also a great source of fiber and minerals like manganese and phosphorus.
Making cauliflower into a “rice” is easy if you have a food processor however these days you can find riced cauliflower in just about every grocery store both fresh and frozen. For this recipe, I would suggest starting with fresh. This is a vegan, grain free recipe and is so low in calories you will definitely have some room for more important things like say Pumpkin Pie with Coconut Whip Cream! Grain Free Cauliflower Stuffing
2 T coconut oil
1 cup sweet onion, chopped
2 garlic cloves, minced
2 stalks celery, diced
2 large carrots, diced
4 cups cauliflower riced
1 cup baby belle mushrooms, chopped
1/2 cup vegetable stock
1 tsp. sea salt
1/2 tsp. pepper
2 T fresh rosemary, chopped
1 tsp. sage
1 tsp. parsley
1. Heat coconut oil in skillet over medium heat. Add garlic, onion, carrots and celery and cook for 5 minutes.
2. Add cauliflower and mushrooms and cook for 5 minutes. If vegetables begin to stick add a little vegetable stock.
3. Add seasonings with vegetable stock and remove from heat.
4. Transfer to a baking dish sprayed with coconut oil and place under broiler 3-5 minutes until browned on top.
Makes 7 servings (1/2 cup each)
