Gluten Free, Low Calorie Pumpkin Pie
Pumpkin pie goes great with Thanksgiving and Christmas but what if you could have your pie everyday without ruining your clean eating plan? This pie is so low in calories and so delicious you’ll feel guilty eating it! Enjoy it with some organic yogurt and you have a real dessert the whole family will love.
Guiltless Pumpkin Pie
1/2 cup Slow Cooker Pumpkin Spice Steel Cut Oats (for crust)
1 cup unsweetened vanilla almond milk
2 egg whites, slightly beaten
1 can organic pumpkin
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1/8 tsp cloves
4 packets Kal’s Stevia with Monk Fruit (or other stevia to taste)
1. Preheat oven to 425 and coat a 9 inch pie pan lightly with non-stick cooking spray.
2. Take 1/2 cup of your Crockpot Pumpkin Spice Steel Cut Oats and spread it out on the bottom of the pan. Bake for 10 minutes.
3. Mix together pumpkin, almond milk and eggs. Add in dry ingredients and mix well.
4. Pour pie onto baked crust. Bake pie at 425 for 15 minutes then lower temperature to 350 and continue to bake for 40-50 minutes.
Pie is done when you can stick a pick into the center and it comes out clean.
This pie is 300 calories for the entire pie! For a yummy snack that won’t break your diet try eating 1/6th of the pie (75 calories) with 1/4 cup non-fat plain greek yogurt. Add 1/2 packet of stevia to the yogurt if necessary. This tasty 100 calorie treat will be a favorite with your entire family.
