Grain Free Pumpkin Pancakes
Fall weather and weekends call for a tasty, old fashioned breakfast. In keeping with our pumpkin theme, I perfected my Grain Free Pumpkin Pancake recipe and I think you are going to love it!
This recipe is grain free so it fits with your clean eating plan. I use coconut flour and protein powder to replace traditional flour so they require more liquid. The final batter will be thick so make sure you don’t make the pancakes too large. They won’t bubble so cook them over medium heat in a pan coated with coconut oil. Turn them after a minute or when bottoms are brown.
Enjoy these topped with a little butter or coconut oil and if desired a tablespoon of pure maple syrup!
Grain Free Pumpkin Pancakes
1 scoop or 1/4 c. vanilla vegan protein powder (I use Sun Warrior Raw Blend Vanilla)
2 T coconut flour
1/2 tsp. baking powder
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1/4 tsp. stevia (or to taste)
1/4 cup pumpkin puree
1/2 tsp. vanilla extract
1/2 cup egg whites
1/4 cup unsweetened almond, coconut or cashew milk
1. In a medium mixing bowl add protein powder, coconut flour, baking powder, spices and stevia. Blend well so flour is not clumpy.
2. In a small mixing bowl add pumpkin, vanilla, egg whites and milk. Mix well.
3. Put wet ingredients into dry ingredients and stir until smooth. If batter is too thick you can add a slight bit more milk.
4. Heat a frying pan over medium heat coating it with coconut oil. Once the pan is hot, add the batter in heaping tablespoons to make several medium sized pancakes. The batter will not bubble so watch and check for the bottoms to be brown before turning. Each side will take about 1 minute to cook.
