Grain Free Chicken Fingers

I don’t know about you but I’m getting tired of grilled chicken. Sure it’s easy and clean but after a week or so I’m ready for a change. There are truly so many ways you can prepare your organic chicken to keep it interesting while still eating healthy.

Many recipes for meats and chicken call for a coating or even breadcrumbs in the recipe. The breadcrumbs serve a good purpose but unfortunately will add a lot of unnecessary carbohydrates to the meal and are usually not gluten free. Even if they are gluten free, they will still pack a good deal of carbohydrates into the meal, which is totally unnecessary.

Here to save the day is almond flour or almond meal. Either one will work just fine although an almond meal makes a nice coating on chicken since it’s a bit more coarse. Simply substitute the flour/meal in place of breadcrumbs, season it up as you would for any recipe and you have yourself a clean version of that particular recipe. This recipe here shows you how to do it for chicken fingers that the whole family will love but don’t be afraid to use it in meatballs, meatloaf or any recipe calling for breadcrumbs.

Grain Free Chicken Fingers

24 ounces of organic chicken breast, cut into strips or bites
1/8 cup egg whites
1/4 cup almond flour
1 T paprika
1 tsp. salt
1 tsp. black pepper
1 tsp. cumin
1 tsp. garlic powder
1/2 tsp. cayenne pepper (packs a little kick so be careful with the kids)

Preheat the oven to 375.

Cut your chicken into strips or bite size pieces. If you use small pieces you may need a bit more of almond flour topping.

In a small bowl put your egg whites and whisk.

In another small bowl mix almond flour and spices. Be careful not to use too much cayenne with the kids as these have a little kick to them already.

Dip each piece into the egg whites and roll in the almond flour and spice mixture. Place on a cookie sheet (you can cover with parchment for easy clean up) and bake for 15-20 minutes. Put the pan under the broiler for 3-5 minutes for crispier chicken.
