Aly’s Chicken Sausage Stir Fry

I love helping people transform their lives with diet and exercise and when someone really embraces a healthy diet I am so happy.  This recipe is courtesy of one of my clients who has embraced her new lifestyle of eating right and exercise.  In the kitchen she has become a little gourmet, inventing recipes and sharing them with the group on Facebook.

This latest recipe looked so yummy that I asked Aly if she would share it on my website.  So this recipe is all Aly and I want to thank her for allowing me to post it here today.  Aly not only made this recipe low carb but it is also gluten and dairy free.  In fact, this recipe is Detox Friendly for those of you doing the Two-Week Detox Plan.  Feel free to double the recipe or even add more vegetables, keeping the same basic seasonings and ingredients as your guideline.  If you can’t get to Trader Joe’s for their organic sweet Italian chicken sausage feel free to substitute another chicken sausage of your choice just be sure it is organic.  I hope you enjoy it and I’m sure Aly would love to hear your feedback.

Aly’s Chicken Sausage Stir Fry

1 tsp. coconut oil
1/4 cup red onion, chopped
1 garlic cloves, minced
1/2 red bell pepper, chopped
1/2 cup carrots, chopped
1/4 cup baby Bella mushrooms, sliced
12 oz. riced cauliflower, cooked
1 cup sugar snap peas
1-12 oz. package of Trader Joes organic sweet Italian chicken sausage, sliced
1/2 T Bragg’s liquid aminos
1 1/2 tsp. Sriracha sauce
1/2 tsp. sea salt
1/2 tsp. pepper
1 tsp. cumin

1. Heat coconut oil in a large skillet over medium heat. Add onions and garlic and cook 3-5 minutes until the onions begin to soften.
2. Add carrots, peppers and mushrooms and continue to cook 8-10 minutes until vegetables are tender.
3. Add rice, sugar snap peas, green onion, chicken sausage and stir together.
4. Add liquid aminos, Sriracha, salt, pepper and cumin and cook for 5-7 minutes until snap peas are tender but still crispy.

Carbs: 7 g
Fiber: 2 g
Protein: 17 g
