Chicken Spinach Pizza Crust

If you follow my blogs or train with me you know how much I LOVE pizza!  Pizza is definitely my number one cheat food and special occasion favorite.  Unfortunately however, most pizza is not gluten free and is loaded with calories from unhealthy sources of carbohydrates and dairy fat.
Since I try hard to keep gluten and dairy out of my diet I needed to come up with a way to replace pizza on a regular basis rather than waiting for the cheat meal.  I’ve posted several ideas for alternative pizza crusts and the easiest one so far has been the one that uses either ground chicken or ground turkey as the crust.  In the past I made this pizza crust with oatmeal which is also a healthy option as I used the gluten free oats.

This new recipe combines the lean ground chicken with spinach instead of oats for a lower calorie, lower carb crust option.  It not only comes out just as good but its actually easier to spread on the parchment paper making it quicker to prepare.

Topping the pizza is where all the fun comes in!  I personally love cold food so I top it with tomato paste and avocado with a sprinkle of hot pepper.  Another cold option if you eat dairy would be some ricotta cheese, tomatoes and fresh basil.  Both of these cold pizzas are scrumptious but my family prefers it hot!  For a hot slice of traditional pizza put the slice in a pan and top it with tomato sauce, mozzarella cheese and a sprinkle of Parmesan, basil and red pepper.  Cover the pan on medium heat to melt the cheese and brown the bottom.  This traditional crust tastes like you are eating a piece of chicken Parmesan and the kids will love it!

Chicken Spinach Pizza Crust

16 oz package of 98% fat free ground chicken
1 cup chopped, fresh spinach
1/3 cup egg whites or 2 egg whites
1 tsp basil
1 tsp oregano
1/2 tsp garlic powder
1 tsp hot red pepper flakes (optional)

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.

Mix all ingredients together and spread evenly over parchment paper.

Bake at 350 for 30 minutes.  Cool and cut into 8 slices.  May refrigerate for later use.

Carbs:  0.3 g
Protein:  12.9 g
