Asian Lettuce Cups – gluten free, low calorie, healthy dish
If you’ve ever had those delicious lettuce wraps found in popular Chinese restaurants you will love having this clean version to enjoy at home. This version eliminates all the high fat chicken and sauces used in restaurants to make their meals more appealing.
Here we use real lean turkey and lots of great flavors to enhance the meat naturally without all the added fat and sugar found when you eat these out in a restaurant. A typical portion of lettuce wraps found in a popular Chinese restaurant has almost 600 calories, 24 grams of fat, 64 grams of carbohydrates of which 47 grams are sugar! UGH! No wonder Americans are getting fatter! My version has 200 calories, 3 grams of fat and only10 grams of carbohydrates which come from the natural sources in vegetables! Give these a try the next time you are craving some Chinese. I promise you won’t be disappointed!
Asian Lettuce Cups
20 ounce package of Extra Lean Organic Ground Turkey breast
1 tsp coconut oil
1 clove garlic, minced
1/8 tsp ground ginger
1 cup sweet onion, diced
1 (8 oz) can chopped water chestnuts, drained and rinsed
12 Boston Lettuce leaves
3 T Home Made Hoisin sauce* (see below)
2 T Bragg’s Amino Acids (or low sodium soy sauce)
1 T rice vinegar
2 tsp Sriracha sauce
1/8 tsp salt
*Home Made Hoisin Sauce – mix together:
3 T Bragg’s Amino Acids (or soy sauce)
1 T Just Great Stuff Powdered Peanut Butter
1/4 tsp garlic powder
1-2 dashes of stevia
dash of white pepper
Heat coconut oil in large skillet over medium-high heat. Add onion, garlic and ginger and cook 3-4 minutes until onions are soft. Add turkey and continue to cook for about 6 minutes until turkey is cooked through.
Remove from heat and add water chestnuts, home made hoisin sauce, Bragg’s amino acids, rice vinegar, Siriachi sauce and salt. Stir well. Serve in lettuce leafs.
