Quick and easy to make these high protein “grab and go” goodies can be breakfast, lunch, dinner or snack!  Be creative and try your own favorite ingredients.

Mary’s Muffin Cup Frittata’s

2 cups egg whites (I use store bought from a carton)
½ onion chopped
Pre-cooked vegetables – I use 1 sweet potato baked and cut up into small pieces; and 8 oz cooked spinach
½ cup fat free cheddar cheese (optional)
Black pepper to taste

Preheat oven to 375 degrees F.  Mix all ingredients into a bowl.  Spray non-stick muffin tins lightly with non-stick cooking spray.  Fill each tin ¾ full and bake for about 30 minutes or until fork comes out dry.

When I make these it makes about 12 muffin cups at 40 calories or less each.  You can vary the ingredients and it may change the outcome slightly but basically you have delicious grab and go frittata’s that you can eat hot or cold.  Enjoy as a snack or meal.
