Enjoy these mashed potatoes without the guilt!  Easy to prepare and delicious…even your husband will love them!

Eat Clean Mashed Potatoes

 
2 1/2 cups chopped cauliflower
1/2 cup non fat plain Greek yogurt
salt and pepper to taste
 
Preheat oven to 450 degrees F.  Line a baking sheet with foil and spray with non stick cooking spray.  Spread cauliflower on top of baking sheet, season with salt and pepper and cover with another piece of foil.  Roll edges to create a seal.
 
Roast cauliflower for 20 minutes then remove top foil.  Continue to roast for 15-20 minutes or until tender.
 
In a food processor, combine cauliflower with yogurt.  Puree until mixture is smooth.  Season with salt and pepper if desired.
