Grain Free Pumpkin Cookies
It is the time of year again for pumpkin everything! So why not some cookies? I have two recipes for pumpkin cookies but this one is by far my very favorite and I think you will like them too. These cookies are so low in calories and carbs that they will fit into any healthy eating plan without being called a cheat.
You might be wondering why I do so many recipes with pumpkin. Let’s take a moment to look at the many reasons that pumpkin is amazing for your health before we get into the actual recipe. Pumpkin with its bright orange color is super rich in Vitamin C, beta carotene and several other antioxidants, vitamins and minerals. It is loaded with lutein and zeaxanthin, substances that may help keep your eyes healthy by preventing cataracts and macular degeneration. Imagine being able to eat cookies to help prevent disease!
Pumpkin is low in calories with only 15 calories per 1/2 cup and high in fiber making it a low net carb food. In fact, these cookies have zero net carbs making them a perfect addition to your Lifestyle Diet Plan. I use stevia to lightly sweeten them which makes them sugar free as well.
I find that even people who don’t love pumpkin by itself will find it pleasant in a baked product. So this Fall why not cook up a batch of these yummy treats for your family and see for yourself.
Grain Free Pumpkin Cookies
3/4 cup almond flour
1 scoop (1/4 cup) Vanilla Sun Warrior Protein Powder
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. pumpkin spice
1 tsp. NOW stevia
1/2 cup egg whites
1/2 cup pumpkin puree
1/2 tsp. vanilla
1. Preheat oven to 350 degrees F.
2. Cover 2 cookie sheets with parchment paper.
3. In a large mixing bowl place almond flour, protein powder, cinnamon, baking soda, pumpkin spice and stevia and mix together until blended.
4. In a small mixing bowl combine the egg whites, pumpkin and vanilla.
5. Add wet ingredients to dry and blend well.
6. Drop by level Tablespoons onto parchment paper to make about 20 cookies.
7. Bake at 350 for 12-14 minutes until browned on the bottom.
Keep refrigerated or freeze to retain freshness.
