Grain Free Banana Muffins
Do you ever wonder what you can do with those overripe bananas on the counter? Well I got tired of wasting them each week and decided it was time to come up with a good grain free muffin recipe that would be easy to make and fit into my clean eating plan. These came out great and I used ingredients I keep on hand for everyday cooking.
Since I use coconut flour and almond flour, these are grain free and gluten free. Using a little Sun Warrior Raw Blend into the recipe adds protein to balance out the macronutrients of these muffins nicely. For anyone following one of my Lifestyle Plans these are a perfect addition.

Grain Free Banana Muffins
3/4 c. almond flour
1/4 c. coconut flour
1/2 c. Sun Warrior Raw Blend Vanilla
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. stevia or to taste (may use honey)
3 small bananas mashed
1/2 cup liquid egg whites
1/2 cup unsweetened applesauce
1 tsp. vanilla extract
Preheat oven to 350.
1. In a large mixing bowl combine almond flour, coconut flour, protein powder, baking powder, cinnamon, salt and stevia.
2. In a smaller mixing bowl combine the remaining ingredients.
3. Mix wet ingredients into dry ingredients and blend well.
4. Distribute evenly into 12 muffin cups (I recommend using silicone or lightly spraying your tin).
5. Bake for 20- 25 minutes until browned.
6. Store in refrigerator or freezer to preserve freshness.
