Bean-Free Turkey and Vegetable Chili
When cooler fall weather arrives, a warm bowl of chili is the perfect comfort food. Unfortunately, many traditional chili recipes rely heavily on beans, fatty meat, packaged seasoning mixes, and added sugar. This Bean-Free Turkey and Vegetable Chili offers all the cozy flavor of traditional chili in a lighter, lower-carbohydrate meal filled with lean protein and colorful vegetables.
Made with 98% lean organic ground turkey, tomatoes, carrots, sweet peppers, onions, and sugar snap peas, this recipe provides a satisfying combination of protein, fiber, and nutrients. The vegetables add natural sweetness and texture, while chili powder, cumin, garlic, salt, and pepper create plenty of flavor without the questionable ingredients often found in packaged chili seasoning.
It is also an easy one-pot meal that can be prepared ahead of time. Make a batch for dinner and enjoy the leftovers for lunch, or freeze individual portions for busy days when you need something healthy and filling.

1 teaspoon coconut oil
1 cup chopped sweet onion
2 carrots, chopped
2 sweet peppers, chopped
2 cloves garlic, minced
16 ounces 98% lean organic ground turkey
3 tablespoons chili powder
1 teaspoon cumin
1 teaspoon sea salt
½ teaspoon black pepper
1 box POMI chopped tomatoes
6 ounces sugar snap peas, trimmed and chopped
Instructions
1. Heat the coconut oil in a large pot over medium heat.
2. Add the chopped onion, carrots, and sweet peppers. Cook for approximately 5–7 minutes, stirring occasionally, until the vegetables begin to soften.

4. Add the ground turkey. Break it apart with a wooden spoon and cook until it is no longer pink.
5. Stir in the chili powder, cumin, salt, and black pepper. Cook for another minute to allow the spices to release their flavor.
6. Add the chopped tomatoes and stir everything together. Bring the chili to a gentle simmer.
7. Cover and simmer over low heat for approximately 20 minutes, stirring occasionally.
8. Add the chopped sugar snap peas and continue cooking for another 5–10 minutes, or until the vegetables have reached your preferred tenderness.
9. Taste and adjust the seasonings if necessary. Serve warm.
