 Grain Free Pumpkin Bread

But most traditional pumpkin breads are loaded with refined flour, sugar, and inflammatory oils—ingredients that don’t support our long-term wellness goals.That’s why I created this grain-free, dairy-free pumpkin bread that skips the sugar and oils but still delivers all the comforting flavors of fall. It’s made with almond flour and coconut flour to keep it gluten- and grain-free, uses stevia instead of maple syrup for a sugar-free option, and unsweetened applesauce for moisture instead of oil.

It’s the perfect companion to a cup of tea, a healthy snack, or a light breakfast—and it fits beautifully into a low-carb, high-protein lifestyle.

 Grain-Free Pumpkin Bread Recipe

Ingredients:

1 cup organic pumpkin puree (not pie filling)
3 large pasture-raised eggs
¼ cup unsweetened applesauce
1 tsp vanilla extract
1 tsp stevia (or to taste)
1½ cups blanched almond flour
1/4 cup coconut flour
1 tsp baking soda
½ tsp baking powder (aluminum-free)
1½ tsp pumpkin pie spice
½ tsp cinnamon
¼ tsp sea salt

Instructions:

1. Preheat oven to 350°F. Grease a 9×5 loaf pan or line it with parchment paper.

2. In a medium bowl, whisk together pumpkin, eggs, applesauce, and vanilla.

3. In a separate bowl, mix almond flour, coconut flour, baking soda, baking powder, stevia, spices, and salt.

4. Combine wet and dry ingredients until smooth.

5. Pour batter into loaf pan and smooth the top.

6. Bake for 45–50 minutes, or until a toothpick comes out clean. Cool for 10 minutes, then transfer to a rack to cool completely.
