Gail’s Eggplant Dip
Fall has arrived and with it comes football and fall gatherings. Since eggplant is in season, this dip is a great addition to your menu. Whether you are tailgating, watching the game or just want a great fall recipe, this dip is going to keep you on track with your clean eating plan while satisfying your need for a snack. This dip is gluten and dairy free, low calorie and high fiber. It is loaded with antioxidants and phytonutrients from the eggplant, tomato paste, red peppers, onions and garlic. It is super tasty and very versatile. Eggplants are rich in fiber and antioxidants and super low in calories. Best of all, eggplants are in season and it is always best to buy seasonal produce.
This eggplant dip is perfect to serve with cut up vegetables or some grain free chips. (Check out my Favorite Low Carb Alternatives to Grains for some healthy choices.) Make a double batch and use it for a condiment on any dish. I recently made some nachos with bean chips and used the dip in place of refried beans and it was amazing. Get creative and enjoy! And don’t worry if you are on BodyDesigns Two-Week Detox Plan because this dip is Detox Friendly.
Gail’s Eggplant Dip

5 cloves of garlic, minced
1 T tomato paste
1 tsp. salt
1/2 tsp. ground black pepper
1/2 tsp. dried basil

Lightly coat a rimmed cookie sheet with coconut or olive oil spray. Spread vegetables out on the baking sheet along with minced garlic and lightly spray with coconut or olive oil. Season with salt and pepper.
Roast for 45 minutes, until vegetables are slightly browned and soft, tossing once during cooking. Remove from oven and allow to cool a few minutes.
Place vegetables, spices and tomato paste into a food processor and pulse 3-4 times to blend. Add salt and pepper to taste.
The entire batch is only 263 calories! Use this as a dip to serve with vegetables or crackers or try it over your chicken or fish as a topping. Delicious and nutritious, this recipe won’t raise your blood sugar.
