Client Spotlight on RC – How Eliminating Dairy Changed Her Life
RC came to me in March struggling with losing weight, asthma, high cholesterol, lack of energy, gut bloating and horrible skin breakouts. At 36 years old and a working mom of two small children, she struggled to find balance. She was still nursing her second child and despite working out hard several days a week she could not shed these last few pregnancy pounds.
When I looked at her diet I quickly discovered that she eating a lot of processed “health” foods like protein bars (full of artificial sweeteners and chemicals), frozen high carbohydrates meals, chips, fruits and snacks throughout the day and evening hours and eating dinners out 2-3 times a week at fast food or other restaurants. She was not getting the nutrition she needed to maintain nursing with her busy schedule and workout routine and she was missing a lot of essential nutrients with her quick grab foods filling in her gaps in her busy days.
RC decided to start with my Two Week Detox Plan so we could get her off all the processed foods, dairy and gluten and get her eating just real foods for two full weeks. To her amazement, she felt great off of all these inflammatory foods and noticed that not only had her health improved with no asthma attacks and feeling more energy but her daughter began sleeping through the night. Our first thought was that something in her milk had been irritating her daughter too.
RC began her Lifestyle Diet Plan with me and decided she was feeling so good off of dairy and gluten that she would stay off these foods. She quickly lost her weight and got those last few stubborn pounds off but most of all she noticed her skin cleared up, she slept better, had no gut issues and no asthma attacks even during her usual rough spring allergy season. She has not had any issues with skin or asthma since being completely off of dairy. These were lifelong issues for her so this small change has literally changed her life.
She continues to hold down a demanding job where she often has to travel for weeks at a time. She has learned what to bring with her when traveling and how to order in restaurants to maintain her new healthy lifestyle. She continues to maintain an active lifestyle with her exercise only now she has the energy to do it all.
When I asked RC what helped her be successful she told me:
1. Learning about food and how it determines what happens to our health opened my mind. I had no idea that what I was eating was affecting my health in so many ways. I’m convinced I have always had issues with dairy and possibly gluten and struggled my whole life with asthma that is now virtually gone. All the other changes are icing on the cake. I love my new healthy lifestyle and love knowing how food is feeding my health and not promoting disease. I’m hooked.
2. Mary helped me by educating me then daily coaching gave me the guidance I needed to make the changes and be successful. Helping me with travel advice was key to maintaining good habits while away from home.
3. Mary’s recipes and her Favorites lists gave me lots of great choices for those times I needed a quick, healthy snack.
4. Last, now I’ve learned how to read labels and ingredient lists and make good choices for me and my family moving forward.
