Aly’s Chilled Shrimp Pasta Salad
Who said pasta salad had to be fattening and high in carbs? When you use your creativity and find a pasta made with beans that is high fiber and delicious, you can have your pasta and eat it too. And that is exactly what Aly did for this delicious recipe.
Since I am highly allergic to shellfish you don’t see any recipes from me using shrimp. With that said, however, I do think it’s fine for my clients to eat wild caught shrimp. It is a super low calorie and low fat fish. The cholesterol found in shrimp should not be an issue for someone with high cholesterol as cholesterol in food is not the problem. High cholesterol in the blood comes from sugar, high carbohydrate diets and unhealthy fats.
Aly has succeeded once again in being creative to come up with ways to enjoy her traditional foods without sacrificing nutrition or her waistline. If you like pasta salad but are allergic to shrimp or prefer another type of protein the recipe can easily be adjusted to fit your preference. The important thing here is how she substituted traditional foods for healthier options. Another substitution you might make is to use a different type of bean pasta, just be sure that it is high in fiber and protein and low in net carbs. This same company makes a chick pea pasta but the net carbs are much higher.

Aly’s Chilled Shrimp Pasta Salad
1 cup red onion chopped
1 bell pepper, chopped
1 cup fresh baby spinach chopped
1 jar jalapeno peppers, chopped
48 Wild Caught Shrimp
8 oz. Edamame Spaghetti, chopped into small pieces
juice of 4 limes
In a medium size mixing bowl combine all ingredients together. Chill well before serving.

Fat: 2 g
Carbs: 11 g
Fiber: 6 g
Protein: 22 g
As you can see this makes a lot of salad. Enjoy it with your family or serve it at your next gathering for a hearty, healthy alternative to traditional pasta salad.
