Healthy Miso Soup

If you’ve ever eaten in a Japanese restaurant you most likely enjoyed a bowl of light Miso Soup before dinner. This recipe is a little bit of a twist on traditional Miso Soup as I’ve added more ingredients and a little kick with my favorite hot sauce! Miso paste, which you use for the soup, is a fermented soy product and therefore is an excellent way to populate your gut with healthy, friendly bacteria. Since Miso is a soy product though, you want to make sure it is organic and GMO free. The paste I found is made by Miso Master Organic and it was at the Natural Food Warehouse in the refrigerated section. Enjoy this with meals or as a light snack. Make this large batch and freeze half for another week so you always have some of this gut friendly food on hand! And remember soups are an excellent way to help with weight loss and maintenance as these lighter type of soups can fill you up without adding a lot of calories to your day.

Mary’s Miso Soup

1 tsp coconut oil
1 cup sweet onion, chopped
1 cup celery, diced
2 garlic cloves, minced
2 medium size carrots, chopped into small pieces
1 T ginger root shaved or use ginger already in a tube
12 ounces Silken Extra Firm Tofu, chopped into small cubes
2 T Bragg’s Amino Acids
6 T Organic Light Miso Paste
5 large mushrooms, sliced and cut in quarters
64 oz unsalted vegetable stock
salt and pepper to taste (remember the stock is unsalted so you should use some salt)
Sriachi sauce – to taste

In a large stock pot heat coconut oil over medium high. Add onion, celery, garlic, and carrots and cook for about 8-10 minutes until soft.

Add ginger, Bragg’s Amino Acids and Miso paste and cook an addition minute to combine flavors.

Add vegetable stock, tofu, mushrooms, salt, pepper and Srirachi sauce to taste. Heat for 5 minutes and its ready to serve.

Makes 11 servings at 1 cup each.
