Clean Sweet and Sour Chicken
Chinese food is traditionally a favorite in our house hold. Everyone has their particular dish and orders the same thing every time! I used to just worry about the MSG found in most of your chinese food but nowadays I don’t really trust what else they might be adding to my dish. I’ve learned how to order really clean in a Chinese restaurant by always asking for sauces on the side and plain steamed chicken and vegetables. I skip the white rice and opt for either quinoa or some cauliflower rice instead. My family is another story. Since they tend to order the real fattening and unhealthy stuff, I’ve decided to take a favorite recipe and clean it up for them. The results were incredible and the family loved it. Hope you enjoy it too!
Clean Sweet and Sour Chicken
1 pound of organic chicken breast, cut into cubes
1 tsp coconut oil
1 T garlic powder
1 T red pepper flakes
1 red bell pepper, chopped into 1 inch pieces
1 yellow bell pepper, chopped into 1 inch pieces
4 T organic ketchup
4 T spicy brown mustard
4 T Low Sugar Apricot Jam
Season chicken with garlic and red pepper flakes.
Heat 1 tsp coconut oil in a skillet on medium-high. Add chicken and cook 6-8 minutes until cooked.
In a small bowl, mix ketchup, mustard and jam.
Add sauce and peppers to cooked chicken and lower heat. Cook for 5 minutes. Serve over quinoa or cauliflower rice for a health alternative to regular rice.
