Slow Cooker Pumpkin Spice Oatmeal
The Slow Cooker is wonderful for dinners especially when you are a busy, working parent. But breakfast can also be made in a Slow Cooker for the next day while you are working. Fall brings back to school and thoughts of pumpkin everything so I thought this breakfast idea would be perfect timing for you and your family.
This oatmeal is sinfully good but no worries because its only 100 calories for 1/2 cup cooked portion. Enjoy a hearty bowl after your workout or even for a nighttime snack. Check out my Balanced Oatmeal Recipe which would be excellent to incorporate for a full, balanced meal. If your kids like oatmeal be sure to double the recipe so you save some for yourself. Also note that this is the recipe I used for the crust of the Guilt Free Pumpkin Pie.
Notice the oats are organic. Oats are a highly sprayed food and to avoid getting dangerous pesticides in your food be sure to always choose organic.
Slow Cooker Pumpkin Spice Oatmeal
1/2 cup gluten free, organic steel cut oats
1 cup unsweetened vanilla almond, coconut or cashew milk
1 cup water
1/4 cup organic, canned pumpkin
2 tsp pumpkin spice
2 tiny scoops stevia
1. Spray bottom of slow cooker with oil to avoid sticking.
2. Place all ingredients in the crockpot on low for 3-4 hours.

Fiber: 3 g
Protein: 4 g
*sweetness is an individual preference and depends which type of stevia you use.
