Chocolate Strawberry Chia Seed Pudding – sugar free, dairy free, gluten free, guilt free

Looking for a Valentine’s Day dessert for your love? I’ve got you covered with this clean and easy recipe that is not only healthy but won’t ruin your clean eating plan.

Chia pudding is definitely a super easy and healthy recipe.  This recipe is also very versatile – check out my other types of Chia Seed Puddings for some variations.  Chia seeds are a healthy fat, rich in omega 3 fatty acids.  Adding omega 3’s to your diet can help with hot flashes as well as lower blood pressure, fight diabetes and reduce the risk of heart disease.

Chia Seeds have the unique properties of a thickening agent when combined with liquid.  We can use chia seeds for milkshakes, egg replacement or just as an addition to any salad or recipe to add some healthy fat.  Check out my Chia Seed Milkshake recipe for another delicious treat.  All my detox shake recipes that come with the Two Week Detox Plan also use chia seeds as a thickening agent.

Flax seeds can also be used however, I think the taste of a chia seed is better and flax seeds can be more difficult to digest.  Feel free to play around with other fruits and different additions to make this pudding with your favorite additions.

Chocolate Strawberry Chia Seed Pudding

Let chia seeds soak in milk for 5-10 minutes

1 cup unsweetened non dairy milk (I used Cashew)
1/4 cup organic chia seeds
1 1/2 cups cut up organic strawberries (about 6 large)
3 T carob, cacao or unsweetened cocoa
4 scoops or 1 tsp. stevia or to taste (may use 1 T honey)

1. Put chia seeds in milk and allow to sit for a few minutes, stirring a few times.
2. Cut strawberries and place in high speed blender.
3. Add carob, cacao or cocoa and stevia to blender and mix on high to blend well.
4. Add milk and chia seed mixture and mix quickly just enough to combine. May adjust stevia if needed at this time.
5. Pour into glass dishes and refrigerate for at least 3 hours to set.

Carbs:  13 g
Fiber:  4 g
Protein:  3 g
