Grain Free Chicken Crust Pizza
Am I seriously doing another pizza crust recipe? I know, I know but I just can’t get enough pizza! If you follow my blogs, I’ve posted cauliflower crust, zucchini crust, chicken crust made with oatmeal and chicken crust made with spinach. Well I’m really loving this new recipe using the basic chicken crust recipe but substituting coconut flour for the spinach or oatmeal.
This new recipe combines the lean ground chicken with coconut flour and seasonings for a crispier crust. It not only comes out just as good but it’s actually easier to spread on the parchment paper making it quicker to prepare and it cooks quicker.
Topping the pizza is where all the fun comes in! I personally love cold food so I top it with tomato paste and avocado with a sprinkle of hot pepper. Another cold option if you eat dairy would be some ricotta cheese, tomatoes and fresh basil. Both of these cold pizzas are scrumptious but my family prefers it hot. For a hot slice of traditional pizza put the slice in a pan and top it with tomato sauce, mozzarella cheese and a sprinkle of Parmesan, basil and red pepper. Cover the pan on medium heat to melt the cheese and brown the bottom. This traditional crust tastes like you are eating a piece of chicken Parmesan and the kids will love it!
Grain Free Chicken Crust Pizza
16 oz. of organic, extra lean ground chicken (ask the butcher to grind it while you shop)
2 T coconut flour
1/3 cup egg whites or 2 egg whites
1 tsp basil
1 tsp oregano
1/2 tsp garlic powder
1 tsp hot red pepper flakes (optional)
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Mix all ingredients together and spread evenly over parchment paper.
Bake at 400 for 20 minutes. Cool and cut into 8 slices. May refrigerate for later use.
