Detox Soup
If you’ve been looking for a satisfying, cleansing, detoxifying soup made with real food then look no further! This recipe was developed as part of BodyDesigns Two-Week Detox Plan and many of my clients continue to make the soup even when the cleanse is over.
This recipe was modified from a Dr. Oz Detox Soup recipe where I changed some of the ingredients to better reflect my own personal tastes and cooking requirements for a healthy recipe. It makes a ton so feel free to freeze half for another week unless you have a few people eating eat.
One last note that’s important to mention is that processed soups are loaded with chemicals, especially sodium. They leave you feeling bloated rather than helping your body to get rid of excess fluid. Be sure to use the unsalted stock and the POMI or real tomatoes, for a healthy soup.
Mary’s Detox Soup
1 tsp. coconut oil
1 medium sweet onion, chopped
2 garlic cloves, minced
8 stalks of organic celery, chopped
1 leek, chopped
1 small or medium rutabaga, peeled and chopped
1 box of chopped Pomi tomatoes or 5 large tomatoes chopped
8 cups of organic, unsalted vegetable or chicken stock
4 cups of fresh, chopped, organic kale
Salt and pepper to taste (I used about ½ tsp. of each)
season to taste – be creative
In a large stock pan heat the coconut oil over a medium heat.
Add onions, garlic, and leek and cook for about 3-4 minutes.
Add rutabaga and celery and cook for an additional 5 minutes.
Add the box of Pomi tomatoes and the unsalted stock, bring to a simmer and cover for 15 minutes.
When the soup is done, remove from heat and add the kale and cover the pot to allow kale to cook for a few minutes in the hot soup.
Salt and pepper to taste.
This recipe made a ton! I actually used a small and a medium rutabaga because that’s all I could find that wasn’t too large. The soup had so many flavors from the rutabaga and leek that it actually has a little kick to it.
