Slow Cooker Spaghetti Squash and Meatballs
Fall is the perfect time to enjoy seasonal produce like spaghetti squash. As the weather cools down, this vibrant yellow gourd comes into peak season, making it more affordable, fresher, and easier to find at local markets. With its naturally mild flavor and noodle-like strands, spaghetti squash is a fantastic low-carb alternative to traditional pasta—especially when paired with hearty meatballs and savory tomato sauce.
Nutritionally, spaghetti squash is a powerhouse for anyone looking to lighten up their meals without sacrificing comfort or flavor. It’s low in calories and carbohydrates, yet rich in fiber, vitamin C, B vitamins, and antioxidants that support overall health. While dinner simmers to perfection, you’re free to focus on the things that matter most—whether that’s family, work, or just a moment to breathe. It’s a cozy, wholesome dish that practically cooks itself, leaving you with a warm, nourishing meal and less time in the kitchen.
