Wild Caught Cod with Tomatoes and Wine
Everyone knows that an important part of any clean eating plan will include fish. Fish is low in calories and high in omega 3 fatty acids which help us maintain lower blood pressure and prevent heart disease. Low in calories, mild in flavor and readily available everywhere, Wild Cod is a great addition to your diet.
Whenever you buy any fish always make sure you know where it came from to avoid heavy metals and toxins. I like Whole Foods because I trust their fishery choices as they are very particular in their standards. Wild Cod is an extremely mild fish without the “fishy” smell or taste so no worries for those of you who are weary about trying new foods. The recipe you use will dictate the flavors in your dish. This recipe below is simple and delicious for the whole family. Remember that the alcohol content of wine cooks off so you don’t have to worry about your children getting drunk!
Wild Cod with Tomatoes and Wine
1 pound Wild Cod, (4 filets)
salt and pepper to season
1 tsp coconut oil
1 cup sweet onion, diced
1/2 carton of Pomi chopped tomatoes
1 cup white wine
Lightly season fish with salt and pepper.
Heat coconut oil in large skillet over medium-high heat. Add onions and saute about 5 minutes.
Add tomatoes and continue to cook 5 minutes.
Place fish pieces on top of tomatoes and cover with wine. Cover pan and simmer for 10 minutes.
