Summer Squash and Tomatoes
It’s that time of year again for fresh garden vegetables like zucchini, yellow squash, tomatoes and sweet onions! If you grow your own vegetables or are part of a farm share you might find yourself with more squash and tomatoes than you can handle. Take advantage of these summer favorites with my Summer Squash Delight! This makes a huge pot that can be used all week as a side dish, snack or part of a meal. Quick and easy to prepare, this is a great way to use some of those delicious vegetables.
Summer Squash Delight
1 Sweet onion, chopped
3-4 yellow squash, sliced
3-4 zucchini sliced
3-4 fresh tomatoes or 1 box Pomi chopped tomatoes
basil and oregano to taste
1-2 tsp coconut oil
No-salt added chicken stock or bone broth, optional if you want more liquid
Saute onion in coconut oil until soft adding no salt chicken stock if needed to prevent sticking. Add yellow squash and zucchini and continue to cook until they start to become soft. Add tomatoes and spices and simmer for 15-20 minutes. Enjoy hot or cold!
