Pumpkin Cookies
These tasty little cookies are a low calorie, low carbohydrate and high a protein treat. Made with almond flour in place of regular flour, these treats make a nutritious and tasty addition to any meal or snack.Almond flour is a baking alternative that can be great for diabetics or people watching their carbohydrate intake. You can replace regular flour in any recipe with almond flour for similar results. Since this type of flour is expensive though I’d reserve it to make those low carbohydrate treats you want to have every once in awhile. Also be sure to store your flour in the refrigerator as it will go rancid if left out.
1 cup almond flour
1/2 can of organic pumpkin
2 scoops vegan protein powder
1/3 cup regular oatmeal (or Red Bob’s GF)
3 packets Pure Stevia Extract Plus Luo Han Powder – 100 Packets
or 4 packets regular stevia
2 tsp pumpkin pie spice
1 tsp cinnamon
1/4 cup liquid egg whites
1. Preheat oven to 350 degrees. Spray 2 cookie sheets with non stick cooking spray.
2. In a large bowl combine all ingredients and mix well with a spoon. Place batter in heaping teaspoons on cookie sheet to make 24 scones.
3. Bake 15-20 minutes checking to see if done.
