Coconut Whip – A Dairy Free Alternative to Whip Cream

Coconut whip cream is not only a perfect dairy free substitute for whipped cream but it is seriously delicious.  I think it is way better than any whip cream you can find in the store when it comes to the flavor and creamy texture.  Since it is made from just pure coconut milk with a touch of stevia and vanilla extract if desired, it is also low carb and sugar free. 

But this recipe is not just delicious, it also comes with some amazing nutritional benefits.  Coconut milk is full of B Vitamins, C and E, and is also rich in magnesium, phosphorus, iron and potassium. It’s loaded with antioxidants that can fight free radicals and rebuild cells damaged cells.  It has been touted to help reduce inflammation, help with weight loss and have antibacterial, antifungal and antibacterial properties.  Coconut milk has also been shown to help improve gut health by decreasing inflammation, improving digestion and feeding the “good guys” in the intestine.  So imagine eating your pumpkin pie and topping it with a delicious whip that is also healthy for you.

Coconut Whip

1 can of full fat coconut milk, chilled overnight

1 T monk fruit or 1 tsp stevia (or to taste)

1/4 tsp. vanilla extract (optional)

Directions:

1. Place your unopened can in the refrigerator over night. Also, place your metal mixing bowl so it will be cold.
2. Open can and drain out the liquid so you are left with just the thick, hardened coconut cream. Place cream in the cold mixing bowl.
3. Using a hand or stand mixer set to medium-high, whip the cream for 2 minutes, until soft peaks form.
4. Add desired sweetener and optional vanilla extract.

Serve immediately or store in refrigerator up to 5 days.
