Whether its a Christmas party or some other social gathering, being prepared with your own healthy, clean food choices can help keep you on track with your Lifestyle Diet Plan.   These tasty meatballs have a southwestern flare and are best served with salsa. The recipe uses almond meal to replace your breadcrumbs for a grain free, gluten free version.   If you are looking for a last minute idea for an appetizer or just another dinner idea these are quick and easy to prepare.

Mini Mexican Meatballs

20 oz packet of lean grass-fed ground beef or organic turkey
1/4 cup sweet onion, finely diced
1/4 cup green pepper, finely diced
1/4 cup almond flour
1 egg
1 tsp cumin
1/4 tsp black pepper
Salsa of choice

Preheat oven to 425 degrees.  Spray a large baking pan with non-stick cooking spray.  Combine all the ingredients in a bowl.  Shape into 1-inch balls and place on cookie sheet.  Bake for 12-15 minutes, turning over halfway through to brown both sides.  Serve dipped in salsa.
